This simple syrup is extremely versatile, and easy to make. You can use any fruit of your choice and scale the recipe based on your amount of fruit. Use it in your coffee, matcha, yogurt bowls, or just about anything to add a fresh fruity flavor.
Tip 1: When fruit is frozen the cells burst which releases more flavor. Even if you have fresh fruit, we advise freezing it before making this syrup
Tip 2: Blending the syrup before sieveing releases more flavor, but will make the syrup cloudy. If you prefer a clear syrup you can simmer the syrup for longer, allow it to cool and then sieve it without blending. Be careful not to squeeze the fruit at this stage.
Ingredients
1 part (by weight) sugar
1 part water
1.5 parts frozen berries/fruit of your choice
Method
1. Combine the ingredients in a saucepan and simmer for approximately 20 minutes. The syrup should have taken on the color of the fruit, and the fruit should have turned pale.
2. Blend the mixture for approx. 20 seconds.
3. Sieve the mixture with a fine sieve to remove remaining fruit flesh and any seeds.
4. Allow the syrup to cool and decant into bottles. Syrup will last several weeks in the fridge.
